It’s important for waiters to find just the right balance…being over solicitous is annoying and being too discreet affects the level of service. You have to finely tune your antennae to gauge the client’s mood – they will bring with them whatever has been happening during their day, so you have to be able to pick up on that. All that’s important is that they enjoy their meal….it’s our job to make sure they do.
