Ingredients
200ml double cream
200g good quality dark chocolate, at least 70% cocoa solids
200g desiccated coconut
30ml of flavour liquor can be added to excite the truffles
Method
1. Pour the cream into a thick bottomed sauce pan, and just bring to the boil.
2. Chop the chocolate into small pieces and place in a clean bowl. Pour over the boiling cream and add liquor if using, and then stir until the cream and the chocolate are well blended and smooth.
3. Cool and then set aside in the fridge until the mixture is solid, about 2 hours.
4. Scoop out teaspoons of the mixture and roll into small walnut balls with your hands. Sprinkle the coconut on to a plate and roll the truffles in the coconut until well coated.
