Biscotti - Fruit and Nut (Winter)

Ingredients
500g plain flour
500g caster sugar
1 Tbsp baking powder
5 eggs lightly beaten
100g sultanas
100g sliced dried apricots
100g chopped dates
100g shelled pistachio nuts
100g whole blanched almonds
Zest of 2 lemons
Method
Cheer up those winter mornings with this super biscotti
1. Mix flour, sugar & baking powder, then add eggs little at a time, and then mix all the rest of ingredients.
2. Mould into small loaf size – about 30cm long, 3cm wide & 1cm high.
3. Bake on greased baking tray for 20 – 25 mins at 180 & allow to cool.
4. Then cut into 1cm slices & dry out in low oven (140) for 12 mins.
