Gremolata skewered prawns

Ingredients
8 large prawns, de-veined and washed
1 Garlic glove
1 unwaxed lemon
60gms flat leaf parsley
40ml good quality olive oil
Method
To make the gremolata:
1. Peel and finely chop the garlic and place in a bowl.
2. Zest the lemon and squeeze the juice from one of the halves.
3. Destalk the parsley and chop the leaves.
4. Add half the olive oil and mix well.
1. Skewer the prawns with a cocktail stick and place in a shallow dish.
2. Pour the gremolata over the prawns and marinate for two hours.
3. Heat a non stick frying pan on the stove and add the remaining oil. When hot add the prawn skewers and cook for two minutes on each side until you have achieved a little colour.
5. Allow to cool and serve with lemon and seasonal leaves.
