Chicken Satay
Only 20 minutes, plus 2hrs marinating to prepare
and 10 minutes minutes cooking time

Ingredients
500g boneless chicken breast, skinned
2 tblsp peanut oil
2 tblsp distilled white malt vinegar
Spice paste
3 garlic cloves, crushed and finely chopped
4 shallots, finely chopped
1 tblsp coriander seed, roasted and crushed
2 teaspoon cumin seeds, roasted and crushed
½ stalk lemon grass, finely chopped
1 teaspoon ground tumeric
2 chillies, finely chopped
Method
- Cut the chicken into 1 cm by 3 cm strips, place into a bowl.
- Grind all of the spice paste ingredients and mix together in a spice grinder and fry in hot oil.
- Cool and stir in the vinegar and then add to the chicken.
- Marinated for 2 hours minimum and then thread onto skewers.
- Best cooked on a char grill but can be baked or grilled.
