Bread - One Rise Olive Oil Bread
Only 20 minutes, plus 30-45 minutes resting to prepare
and 25 minutes minutes cooking time

Ingredients
225g strong flour
1 teaspoon salt
15g fresh yeast or 3 teaspoons dried yeast
pinch caster sugar
170ml warm water
2 tablespoons olive oil
fresh rosemary (optional)
sea salt (optional)
Method
1. Sieve the flour with the salt
2. Mix the yeast and sugar with 3 tablespoons of warm water, pour into a well in the flour. Add 1 tablespoon of oil.
3. Pour in the remaining water then stir quickly to make a soft dough.
4. Knead for 8-10 minutes until smooth and resilient.
5. Oil a baking sheet then roll the dough to an oval about 2cm thick, cover with oiled cling film and leave in a warm place to rise.
6. Pre heat oven to 200C.
7. When dough has doubled in size use your fingers to make 8 dimples in the dough, drizzle with olive oil and insert sprigs of rosemary into each dimple, sprinkle with sea salt if using.
Bake for about 25 minutes.
Chef's Tip
This recipe is great method of making a bread to accompany a homemade soup.
