Skewered Chicken Tikka Kebabs

Ingredients
500g chicken breast, sliced long ways into 25g strips
30g salt
1 lemon, juice and rind
120g natural yoghurt
30g fine-diced ginger
30g fine-diced garlic
20g ground cumin
5g cayenne pepper
10g garam masala
10ml yellow food colouring
5ml red food colouring, mixed with the yellow
Method
- Mix the salt and the lemon together and marinate the chicken strips for 20 minutes.
- Place the yoghurt in a small bowl and mix in the ginger, garlic, cumin, cayenne and garam masala, mix well.
- Mix the chicken with the food colouring and then sieve on the yoghurt mix and mix well.
- Refrigerate for 24 hours.
- Thread the chicken onto skewers and then colour on a thick bottom pan and then finish through an oven, for 8 - 10 minutes at 160’c.
