Ingredients
4 salmon steaks
4 globes stem ginger julienned
grated zest and juice of an orange
2Tablesp of syrup from the stem ginger
Method
1. Skin the salmon steaks
2. Marinade the salmon in the OJ, zest, ginger and syrup – leave for at least an hour
3. Oil a non stick baking tray and put under a hot grill
4. Place the salmon presentation side up on the tray and grill until crispy.
5. Reduce down the juice and ginger and glaze the salmon with the sauce for service.
Serve with bok choi and noodles
