Ingredients
100g chopped red onion
100g chopped green peppers
100g chopped cucumber
200g peeled and chopped tomato
1 ½ teasp chopped garlic
1 ½ teasp salt
¼ teasp cayenne
¼ cup tomato puree
1 tablesp white wine vinegar
2 tablesp extra virgin olive oil
1 tablesp fresh lemon juice
300ml of tomato juice
1 Sprig of thyme
Method
1. Place all ingredients into bowl, mix and leave over night.
2. Take out the thyme and blend until smooth, pass through a fine sieve, chill and serve.
