Ingredients
2 tsp cumin
2 tsp coriander seeds
2 tsp sesame seed
2 cloves garlic
1 red onion
Large bunch coriander
Bunch of flat parsley
2 large red chillies
450g chickpeas
50g chick pea flour
½ teaspoon of bicarbonate of soda
2 eggs
salt & Pepper
Flour for dusting
50g sesame seeds for coating
Method
- Roasted and grin spices until l ightly browned and giving off a fragrant scent.
- Add chopped garlic, onion, chilli, coriander, parsley, de seeded chilli and the bicarbonate of soda
- Add the drained chickpeas and the flour then blend and add the eggs one by one to the right consistency.
- Roll in the sesame seeds.
- Rest for 40 – 45 mins and fry in 180’c oil.
Eat wrapped in Lebanese flat bread with minted yoghurt, shredded mild red chilli and crisp peppery rocket.
