Ian Platt Heads up Procurement
Ian has joined the head office team to take a fresh look at our supply chain. Ian who previously worked in five star hotels and event catering will be working with our key suppliers to develop a purchasing strategy that focuses on sourcing local, fresh products of the highest quality. He will also be working closely with Mike Hanson, our Environmental Manager, to ensure that our purchasing strategy assists with our ambition to achieve BS140001 later this year.
Ian believes that a regional sourcing policy delivers improved quality of fresh produce to our chefs and customers and is at odds with the standard foodservice practice of distributing low cost, overseas products through a central distribution system.
Ian is currently working with Rik Razza, Executive Chef to encourage our chefs to introduce alternative species of fish in their menu planning which are in abundance in UK waters.
This avoids the use of species which are in decline through over-fishing such as Cod and Sea Bass.
